This seemingly unorthodox egg and coffee combo is a deeply steeped Italian tradition. Give it a sip today!
Ingredients (4)
- 1 egg yolk
- 3 tsp caster sugar
- 30ml malvasia (see notes)
- 30ml espresso

1.Place egg yolk and sugar in a medium bowl and whisk until pale, thick and smooth. Transfer to a serving glass. Pour over malvasia and espresso. Stir and serve.
Recipe Notes
Malvasia is a sweet white wine often paired with desserts. It can also be served chilled with seafood or fruity dishes. You could also use a Madeira. You can double or multiply this recipe for as many people as you need. If so, we suggest using a stand mixer or electric beaters, as the yolks and sugar need a serious whisk.
