Italian duck ciabatta rolls

Ingredients (8)

  • 2 packs Luv-A-Duck Roast Duck
  • Duck Legs* (4 legs)
  • 4 ciabatta rolls
  • 3 tbs basil pesto
  • 300g roasted red capsicum, sliced
  • 1/3 cup semi-dried tomatoes
  • 1 cup (50g) rocket leaves
  • 1 cup (80g) shaved parmesan

Method

  • 1.
    Heat the duck legs according to packet instructions. Remove and cool slightly.
  • 2.
    Split the ciabatta rolls and spread the bases with pesto. Add capsicum, semidried tomatoes and rocket. Shred duck meat, discarding bones, and pile on top. Add parmesan and drizzle with any remaining pesto. Wrap in baking paper and tie with string to transport to the picnic. The rolls can be warmed on the side of a barbecue, if desired.
