Italian sausages with beans
Everyone loves sausages, especially when they're paired with rich tomato sauce and crusty fresh bread.
Ingredients (13)
- 1/4 cup (60ml) olive oil
- 6 thin Italian sausages
- 1 onion, finely chopped
- 2 garlic cloves, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 100ml red wine
- 400g can tomatoes
- 2 bay leaves
- 400g canned borlotti beans, rinsed and drained
- 2 tbs chopped flat-leaf parsley, plus extra to garnish
- Grated parmesan, to garnish
- Crusty bread, to serve

1.Heat 2 tablespoons of the olive oil in a heavy-based frypan over medium heat. Add sausages and cook, turning, until evenly browned. Transfer to a plate lined with paper towel and cool slightly.

2.Return the pan to the heat and add the remaining olive oil. When hot, add the onion and cook, stirring, for 2-3 minutes until softened. Add the garlic, carrot and celery, and cook for 2-3 minutes further. Stir in wine and bring to the boil. Add tomatoes, bay leaves, beans and 1 cup (250ml) water.

3.Chop sausages into bite-sized pieces and add to the beans. Reduce heat to low and cook for 10-15 minutes until the sauce has reduced and thickened. Stir in parsley. Sprinkle with parmesan and extra parsley. Serve with bread.
