Everyone loves sausages, especially when they're paired with rich tomato sauce and crusty fresh bread. 

Ingredients (13)

  • 1/4 cup (60ml) olive oil
  • 6 thin Italian sausages
  • 1 onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 100ml red wine
  • 400g can tomatoes
  • 2 bay leaves
  • 400g canned borlotti beans, rinsed and drained
  • 2 tbs chopped flat-leaf parsley, plus extra to garnish
  • Grated parmesan, to garnish
  • Crusty bread, to serve

Method

  • 1.
    Heat 2 tablespoons of the olive oil in a heavy-based frypan over medium heat. Add sausages and cook, turning, until evenly browned. Transfer to a plate lined with paper towel and cool slightly.

    Return the pan to the heat and add the remaining olive oil. When hot, add the onion and cook, stirring, for 2-3 minutes until softened. Add the garlic, carrot and celery, and cook for 2-3 minutes further. Stir in wine and bring to the boil. Add tomatoes, bay leaves, beans and 1 cup (250ml) water.

    Chop sausages into bite-sized pieces and add to the beans. Reduce heat to low and cook for 10-15 minutes until the sauce has reduced and thickened. Stir in parsley. Sprinkle with parmesan and extra parsley. Serve with bread.
