Ingredients (8)
- 230g unsalted butter, melted, cooled
- 2 scant cups (280g) plain flour
- 1/3 cup (55g) icing sugar, plus an extra 1/4 cup (40g)
Topping
- 2 cups (460g) caster sugar
- 1/4 cup (40g) plain flour
- 1 tsp baking powder
- 4 eggs
- 1/2 cup (125ml) lemon juice

1.Preheat oven to 175°C. Line a 32cm x 22cm baking tin with baking paper.

2.For base, combine flour, icing sugar and a pinch of salt in a large bowl. Add cooled melted butter and stir until you have a pasty dough. Tip into the tin and spread evenly over base and up the sides a little using a palette knife. Bake for 20 minutes or until pale golden.

3.Meanwhile, for the topping, whisk together the caster sugar, flour and baking powder. Add the eggs and the lemon juice, and whisk until smooth. Pour onto the hot base and return to the oven for 25 minutes or until just set.

4.Remove from the oven and allow to cool completely before cutting into bars. Dredge with icing sugar and serve right away, or store in the fridge in an airtight container for up to a week and dredge with icing sugar before serving.
