Ingredients (7)

  • 125g unsalted butter, softened
  • 1/3 cup caster sugar
  • 1 tsp vanilla extract
  • 3/4 cup self-raising flour
  • 2/3 cup plain flour
  • 2 tbs milk
  • Caster sugar, extra

Method

  • 1.
    Beat butter, sugar and vanilla together in a bowl until pale and creamy. Sift flours together and stir into butter mixture with milk. Turn out onto a lightly floured surface and knead lightly until smooth. Wrap in plastic and chill for 20 minutes.
  • 2.
    Preheat oven to 180°C. Line a tray with baking paper. Roll out dough to 4mm thick. Use template (see tip, below) to cut out biscuits and transfer to tray. Sprinkle with sugar. Use a skewer to dot edges. Bake for 15-18 minutes until pale golden. Cool.
