“This dish is so beautiful and gamey, but also quite light. Pepperberry is a match made in heaven for kangaroo, which is delicious raw. This recipe takes a few cues from European cooking and elevates the kangaroo to the next level.”
Ingredients (10)
- 300g kangaroo fillet, finely chopped
- 1 tsp chopped capers
- 1 tbs snipped chives
- 4 sea parsley sprigs, chopped
- 1/2 tsp ground pepperberry
- 2 long green shallots, finely diced
- 1/2 tsp English mustard
- 2 tbs labne
- 1 tbs Worcestershire sauce
- Taro crisps, to serve

1.Toss the kangaroo, capers, chives, parsley, pepperberry and long green shallots together in a bowl.
