“This dish is so beautiful and gamey, but also quite light. Pepperberry is a match made in heaven for kangaroo, which is delicious raw. This recipe takes a few cues from European cooking and elevates the kangaroo to the next level.”

Ingredients (10)

  • 300g kangaroo fillet, finely chopped
  • 1 tsp chopped capers
  • 1 tbs snipped chives
  • 4 sea parsley sprigs, chopped
  • 1/2 tsp ground pepperberry
  • 2 long green shallots, finely diced
  • 1/2 tsp English mustard
  • 2 tbs labne
  • 1 tbs Worcestershire sauce
  • Taro crisps, to serve

Method

  • 1.
    Toss the kangaroo, capers, chives, parsley, pepperberry and long green shallots together in a bowl.
  • 2.
    In another bowl, combine the mustard, labne and Worcestershire sauce.
  • 3.
    Serve the kangaroo with a side of the labne mixture and taro crisps.
