"This recipe is the ultimate crowd-pleaser," says chef and TV personality Colin Fassnidge.

Ingredients (12)

  • 6 ripe roma tomatoes
  • 3 garlic cloves
  • 1 red onion
  • ¼ cup (60ml) extra virgin olive oil
  • 500g pork and veal mince
  • 1/3 cup (90g) tomato paste
  • ½ bunch basil, roughly chopped
  • 2 tbs red wine vinegar
  • 1 cup (250ml) red wine
  • Pinch of sugar
  • 400g large rigatoni or other short pasta
  • Parmesan and micro parsley (or flat-leaf parsley) to serve

Method

  • 1.
    Place the tomatoes, garlic, onion, and half the basil in a food processor. Pulse until very finely chopped.
  • 2.
    Heat oil in a saucepan over medium-high heat, add the mince and cook for 5-6 minutes until well browned, then add the tomato paste and stir to coat. Add the blended mixture, pinch of sugar, vinegar, wine and cook 15-20 minutes until reduced and fragrant.
  • 3.
    Bring a large saucepan of salted water to the boil. Add the pasta and cook until al dente, then drain, reserving ½ cup (125ml) cooking liquid.
  • 4.
    Place half the sauce in a food processor and whiz until smooth (or use a stick blender in the saucepan), then add back to the pan with the pasta and reserved water.
  • 5.
    Serve topped with parmesan and parsley.
