Kiffli
Kiffli are Macedonian pastries that are similar to French croissants, but are made in a fraction of the time as Macedonians don’t like to spend three days waiting for food. Air Fryer Express by George Georgievski, published by Plum, RRP $26.99, photography by Nikole Ramsay.

Ingredients (5)

  • 150 g (1 cup) self-raising flour
  • 185 g (1/4 cup) natural yoghurt, plus extra to serve (optional)
  • 75 g ricotta
  • 1 egg, lightly beaten
  • 1 tablespoon sesame seeds

Method

  • 1.
    Place the flour and yoghurt in a blender, push the button and sing the intro to Pearl Jam’s ‘Better Man’, which is about 1 minute. In that time the ingredients will have transformed into a dough and you are ready to go. Divide the dough into six even-sized balls.

    Flatten each dough ball into a 5 mm thick disc, then, using a sharp knife, cut a large triangle from each disc using the full length of the dough. Re-roll the leftover dough and cut out as many triangles as you can. Nothing goes to waste.
  • 3.
    Place 1 teaspoon of ricotta in the middle of each triangle and roll up from the base of the triangle, like you would a croissant, trapping the ricotta in the dough.
  • 4.
    Brush your triangles with the beaten egg, then sprinkle the sesame seeds on top. Line the base of your air fryer with baking paper and pop the kiffli in. Cook on 180°C for 6 minutes. I know, right, only 6 minutes – crazy!
  • 5.
    Enjoy the kiffli hot, with some yoghurt for dipping if you like, or let them cool and add them to lunchboxes. If you are going to eat them at work, explain how you made them from scratch to show what a legend you are.
