The egg white creates a creamy/foamy drink, but can be left out if preferred. Lady Grey tea is similar to Earl Grey, but has more floral notes.

Ingredients (10)

  • 2/3 cup (165ml) gin
  • 2/3 cup (165ml) lemon juice
  • 4 eggwhites (optional)
  • Ice cubes
  • 3 cups (750ml) chilled prosecco
  • Edible flowers (optional), to serve

Lady grey syrup

  • 1/2 cup (110g) caster sugar
  • 1 Lady Grey tea bag
  • 4 juniper berries, bruised
  • 2 strips pared lemon rind, thinly sliced

Method

  • 1.
    To make the syrup, place sugar, tea bag, juniper and 1/2 cup (125ml) water in a small saucepan over medium heat, stirring to dissolve the sugar. Simmer for 4 minutes or until reduced and syrupy. Remove from heat, add lemon rind and set aside to cool completely. Strain syrup, discarding juniper and reserving lemon rind.

    Place half the syrup, 1/3 cup (80ml) gin, 1/3 cup (80ml) lemon juice, 2 eggwhites, if using, and ice in a cocktail shaker or large screw-top jar with a lid and shake well to combine. Strain into 4 champagne flutes. Repeat with remaining syrup, gin, lemon juice and eggwhites. Top with prosecco, edible flowers, if using, and reserved lemon rind, and serve immediately.
