Lamb cutlets with pistachio pesto

Pistachio pesto is a versatile accompaniment to many meals. In this recipe we have paired it with lamb but it tastes equally good with pasta or chicken.
Ingredients (8)
- 100g pistachio kernels
- 30g fresh white breadcrumbs
- 1 lemon, rind grated
- 1 garlic clove, crushed
- 25g grated parmesan
- 1/2 cup firmly packed fresh basil leaves
- 120ml olive oil
- 12 Frenched lamb cutlets
Method

1.Place the pistachios, breadcrumbs, lemon rind, garlic, parmesan, basil and 100ml olive oil in a food processor and process to a paste. Season with salt and pepper.

2.Heat a chargrill to high, brush the cutlets with the remaining oil and chargrill for 1-2 minutes each side. Serve with the pistachio pesto.
