Ingredients (12)

  • 2 tbs soy sauce
  • 1 tbs shao xing cooking wine
  • 1 tsp grated ginger
  • 1 garlic clove, finely chopped
  • 200g lamb backstrap, very thinly sliced
  • 1 pkt Chinese-style pancakes
  • 1 tbs sunflower oil
  • 2 tbs Hoi Sin Sauce, plus extra to serve
  • 1/4 telegraph cucumber, cut into matchsticks
  • 4 spring onions, cut into matchsticks
  • 2 long red chillies, seeds removed, very thinly sliced
  • 1 cup mint leaves

Method

  • 1.
    Combine the soy sauce, cooking wine, ginger and garlic in a bowl. Add the lamb, turning to coat well. Allow to marinate for 15 minutes
  • 2.
    Meanwhile, steam the pancakes according to the packet instructions. Keep warm.
  • 3.
    Heat oil in a wok over high heat. Fry the lamb in batches for 1-2 minutes until just cooked through. Return all lamb to the wok and toss briefly with hoi sin sauce. Transfer to a serving bowl.
  • 4.
    Serve pancakes with lamb, cucumber, spring onions, chilli, mint and extra hoi sin sauce, and allow guests to roll up their own.
