- 2 tbs soy sauce
- 1 tbs shao xing cooking wine
- 1 tsp grated ginger
- 1 garlic clove, finely chopped
- 200g lamb backstrap, very thinly sliced
- 1 pkt Chinese-style pancakes
- 1 tbs sunflower oil
- 2 tbs Hoi Sin Sauce, plus extra to serve
- 1/4 telegraph cucumber, cut into matchsticks
- 4 spring onions, cut into matchsticks
- 2 long red chillies, seeds removed, very thinly sliced
- 1 cup mint leaves

1.Combine the soy sauce, cooking wine, ginger and garlic in a bowl. Add the lamb, turning to coat well. Allow to marinate for 15 minutes

2.Meanwhile, steam the pancakes according to the packet instructions. Keep warm.

3.Heat oil in a wok over high heat. Fry the lamb in batches for 1-2 minutes until just cooked through. Return all lamb to the wok and toss briefly with hoi sin sauce. Transfer to a serving bowl.

4.Serve pancakes with lamb, cucumber, spring onions, chilli, mint and extra hoi sin sauce, and allow guests to roll up their own.
