Rhubarb, honey and ginger lassi

Over milkshakes? Try this refreshing rhubarb lassi.
Ingredients (6)
- 1 bunch (about 450g) rhubarb, roughly chopped
- 200ml runny honey
- 2 tbs ginger, finely grated
- Pinch ground star anise
- 600ml milk
- 2 cups frozen Greek yoghurt

1.Place rhubarb, 1/2 cup (125ml) honey, half the ginger and star anise with 1/3 cup (80ml) water in a saucepan over medium heat. Cook, stirring occasionally, for 8-10 minutes until thick. Cool completely, then in a blender with remaining 75ml honey, 1 tbs ginger, milk and yoghurt. Whiz until smooth. Serve immediately.
