Leche merengada punch

This leche merengada punch is a Spanish version of eggnog. It's delightful any time of the year and can be enjoyed by the whole family if you omit the alcohol.
Ingredients (8)
- 2 1/2 cups (625ml) milk
- 2/3 cup (145g) caster sugar
- 2 strips lemon rind
- 1 cinnamon quill
- 1/2 teaspoon vanilla extract
- 4 eggwhites
- Ground cinnamon, to sprinkle
- Rum, to taste (optional)

1.Put the milk, caster sugar, lemon rind, cinnamon quill and vanilla in a saucepan and place over medium heat. Bring to the boil, then reduce heat and simmer for 20 minutes to allow the flavours to infuse. Strain.

2.Meanwhile, beat eggwhites to firm peaks using electric beaters. With the motor running, gradually add the hot milk mixture into the eggwhites, beating until well combined and frothy. Pour into a chilled jug, leave to cool a little, then refrigerate for 1 hour or until cold.

3.Stir again before serving, then sprinkle with ground cinnamon and serve as a non-alcoholic punch (kids love it), or add a little white rum to taste.
