This leche merengada punch is a Spanish version of eggnog. It's delightful any time of the year and can be enjoyed by the whole family if you omit the alcohol.

Method

  • 1.
Put the milk, caster sugar, lemon rind, cinnamon quill and vanilla in a saucepan and place over medium heat. Bring to the boil, then reduce heat and simmer for 20 minutes to allow the flavours to infuse. Strain.
  • 2.
Meanwhile, beat eggwhites to firm peaks using electric beaters. With the motor running, gradually add the hot milk mixture into the eggwhites, beating until well combined and frothy. Pour into a chilled jug, leave to cool a little, then refrigerate for 1 hour or until cold.
  • 3.
Stir again before serving, then sprinkle with ground cinnamon and serve as a non-alcoholic punch (kids love it), or add a little white rum to taste.
