Ingredients (10)
- 2 wedges leftover peri peri roast pumpkin (see recipe notes for recipe)
- 1 ripe avocado
- 1 long green shallot, thinly sliced
- Juice of 1 lime
- 4 slices miche (round) sourdough
- 1/4 cup (75g) aioli
- 1 cup leftover coleslaw (see recipe notes for recipe)
- 150g leftover roast chicken (see recipe notes for recipe)
- 1/2 cup (20g) alfalfa sprouts
- Hot sauce, to serve

1.Place pumpkin in a bowl and smash with a fork to crush. Place avocado in a separate bowl and mash. Add shallot and lime juice and stir to combine. Season to taste.

2.Spread bread with aioli. Spread pumpkin over half the slices and top with coleslaw, chicken and sprouts. Spread remaining bread slices with avocado. Sandwich slices together. Serve with hot sauce.
