Ingredients (10)

  • 2 wedges leftover peri peri roast pumpkin (see recipe notes for recipe)
  • 1 ripe avocado
  • 1 long green shallot, thinly sliced
  • Juice of 1 lime
  • 4 slices miche (round) sourdough
  • 1/4 cup (75g) aioli
  • 1 cup leftover coleslaw (see recipe notes for recipe)
  • 150g leftover roast chicken (see recipe notes for recipe)
  • 1/2 cup (20g) alfalfa sprouts
  • Hot sauce, to serve

Method

  • 1.
    Place pumpkin in a bowl and smash with a fork to crush. Place avocado in a separate bowl and mash. Add shallot and lime juice and stir to combine. Season to taste.
  • 2.
    Spread bread with aioli. Spread pumpkin over half the slices and top with coleslaw, chicken and sprouts. Spread remaining bread slices with avocado. Sandwich slices together. Serve with hot sauce.
