Lemon and basil spaghetti
Lemon and basil spaghetti
This pasta might sound simple but the lemon and basil give it a sophisticated flavour.

Ingredients (8)

  • 500g spaghetti
  • 50g unsalted butter
  • 300ml thickened cream
  • 1/4 cup (60ml) lemon juice
  • Grated zest of 3 lemons
  • 100g parmesan, grated, plus extra to serve
  • 1/2 teaspoon freshly grated nutmeg
  • 1 cup basil leaves, torn if large

Method

  • 1.
    Cook the pasta in a large saucepan of boiling salted water according to packet instructions.
  • 2.
    Meanwhile, combine the butter, cream and lemon juice in a small pan and place over low heat until butter melts. Remove from the heat.
  • 3.
    Drain pasta, reserving 1 cup (250ml) of the cooking water, then return pasta to the pan. Add cream mixture, zest and enough cooking water to allow the sauce to coat. Add the parmesan and nutmeg, then season to taste. Sprinkle with basil leaves and extra parmesan to serve.
