Lemon, bay and cinnamon gin and tonic
Add sugar and spice to your usual gin and tonic with this fresh-take on a cocktail classic.
Ingredients (7)
- 1 cup (220g) caster sugar
- Pared zest of 1 lemon and juice of 1/2 lemon
- 12 bay leaves
- 4 cinnamon quills
- Crushed ice
- 2 cups (500ml) gin
- 4 cups (1L) tonic water

1.To make the lemon, bay and cinnamon sugar syrup, place sugar, lemon zest, bay leaves, cinnamon and 1 cup (250ml) water in a saucepan over high heat. Cook, stirring constantly, until sugar is dissolved, then bring to the boil. Simmer, without stirring, for 3 minutes or until thickened slightly. Remove from heat, stir through lemon juice and stand for 2 hours or until completely cooled (store, chilled in an airtight container, for up to 1 month).

2.To make the gin and tonic, place 1 tbs lemon, bay and cinnamon sugar syrup into each serving glass, add crushed ice and a piece of zest, cinnamon quill (optional) and bay leaf (optional) from syrup. Add 1/4 cup (60ml) gin and 1/2 cup (125ml) tonic water to each glass and stir gently to combine.
