Lemon and mascarpone ice cream
Don't have an ice cream maker? Don't worry. This easy lemon and mascarpone ice cream requires zero churning – winner!
Ingredients (7)
- 600ml thickened cream
- 2 tablespoons icing sugar, sifted
- 250g mascarpone
- Finely grated zest of 1 lemon
- Juice of 2 lemons
- 350g lemon curd
- 5 (about 100g) meringue nests

1.Begin this recipe 1 day ahead.

2.Using electric beaters, beat cream and sugar in a bowl until soft peaks form (it's important not to overbeat at this stage).

3.Add mascarpone and beat until just combined. Stir in zest, juice and lemon curd with a metal spoon. Crumble meringues into mixture, stir, then place in a 2L (8 cup) plastic container and freeze overnight.
