Lemon, mint & cucumber grappa cocktail
Ingredients (8)
- 300ml grappa (from bottle shops)
- Crushed ice
- 2 cups (500ml) soda water
- Lemon slices, mint sprigs and thinly sliced baby cucumbers (cukes), to serve
Cucumber & mint ice cubes
- Juice of 2 lemons
- 2 Lebanese cucumbers, chopped
- 1/2 cup picked mint leaves
- 1/4 cup (55g) caster sugar
Method

1.For the cucumber and mint ice cubes, place lemon juice, cucumber, mint and sugar in a blender and whiz until combined and sugar is dissolved. Divide among ice-cube tray and freeze overnight.

2.When ready to serve, place ice cubes and grappa in a blender and whiz until combined and smooth. Strain into a jug filled with crushed ice. Add soda water and stir to combine. Serve with lemon slices, mint sprigs and cucumber slices.
