Lemon, mint & cucumber grappa cocktail
Zesty and fresh, this cocktail is the perfect addition to a summer dinner party.

Ingredients (8)

  • 300ml grappa (from bottle shops)
  • Crushed ice
  • 2 cups (500ml) soda water
  • Lemon slices, mint sprigs and thinly sliced baby cucumbers (cukes), to serve

Cucumber & mint ice cubes

  • Juice of 2 lemons
  • 2 Lebanese cucumbers, chopped
  • 1/2 cup picked mint leaves
  • 1/4 cup (55g) caster sugar

Method

  • 1.
    For the cucumber and mint ice cubes, place lemon juice, cucumber, mint and sugar in a blender and whiz until combined and sugar is dissolved. Divide among ice-cube tray and freeze overnight.
  • 2.
    When ready to serve, place ice cubes and grappa in a blender and whiz until combined and smooth. Strain into a jug filled with crushed ice. Add soda water and stir to combine. Serve with lemon slices, mint sprigs and cucumber slices.
