Lemon olive butter
Serve this lemon olive butter with on fish, or even with lobster rolls.

Ingredients (5)

  • 100g unsalted butter, slightly softened
  • 1 garlic clove, crushed
  • 1-2 tbs finely chopped, pitted black olives
  • Finely grated zest of 1 lemon
  • 1tbs finely chopped flat-leaf parsley leaves

Method

  • 1.
    Combine butter, garlic, olives, lemon zest and parsley. Place in ramekins, cover with plastic wrap and chill until firm.
