Lemon-scented potatoes
Ingredients (5)
- 50g unsalted butter, softened
- 1kg chat potatoes, thinly sliced (a mandoline is ideal)
- 1/2 cup (125ml) white wine
- 1 tsp finely grated lemon zest
- 1 tbs chervil, finely chopped
Method

1.Grease a large, deep frypan with half the butter. Arrange potato slices in an even layer in the frypan, slightly overlapping and seasoning between layers. Pour over wine and 1 cup (250ml) water, then sprinkle with lemon zest and season. Dot with the remaining 25g butter.

2.Cover surface closely with a piece of greased baking paper cut to fit. Bring to a simmer over medium-low heat, then cook for 25 minutes. Remove paper and simmer for a further 10-15 minutes until liquid has evaporated and potatoes are tender. Top with chervil and serve.
