Light, airy and perfect for afternoon tea, this easy lemonade scone recipe is a breeze to whip up. The only tricky thing is limiting yourself to one. The secret is the lemonade – the carbonation in the lemonade gives the scones an extra fluffy texture, as well as a touch of sweetness. You'll need a 6cm round cutter for this recipe. Use a sharp-edged cutter, as this will help the scones rise.

- 2 cups (300g) self-raising flour, sifted
- 1/4 cup (55g) caster sugar
- 1/2 cup (125ml) thick cream
- 1/2 cup (125ml) lemonade
- 2 tbs (40ml) milk
- Jam or lemon curd, to serve
- Whipped cream, to serve

1.Preheat oven to 220°C/200°C. Lightly grease a baking tray.

2.Place the flour, sugar and 1/2 tsp fine salt in a large bowl. Add the cream and lemonade and mix to form a soft dough. Turn out onto a lightly floured workbench and knead lightly until combined. Press the dough with your hands to a thickness of about 2cm. Use a 6cm round cutter to cut out 8 scones, then re-roll scraps to make a few extra scones. Place scones on baking tray, close together (this will help the scones rise) and brush the tops with some milk. Bake for 10-15 minutes, until lightly browned.

3.Serve warm with your favourite jam or lemon curd, and whipped cream.
