Long summer days and balmy evenings mean it’s time to bring the party poolside. Make it an affair to remember with this tangy citrus spritz from ace bartender Cara Devine.

Ingredients (7)

  • 45ml limoncello
  • 60ml chilled dry sparkling wine
  • 30ml chilled soda water
  • Ice cubes, to serve
  • 2 lemon wedges

Basil syrup

  • 1/4 cup (55g) caster sugar
  • 5 basil leaves, plus extra sprig to garnish

Method

  • 1.
    For the syrup, place sugar and 50ml water in a small saucepan over medium heat. Bring to the boil, stirring until sugar dissolves. Remove from heat and add the basil leaves. Set aside to steep for at least 30 minutes (the longer it steeps, the stronger the flavour).
  • 2.
    Add limoncello, wine and soda water to a wine glass with 15ml basil syrup and a few ice cubes. Squeeze lemon wedges over glass and drop them in. Stir and garnish with a basil sprig.

Recipe Notes

Basil syrup makes 75ml, enough to make 5 drinks. It will keep in an airtight container in the fridge for up to 10 days.
