Linseed crisps with blue cheese and honeycomb
Forget the regular crackers, these linseed crisps are what you should be serving at your next get together.
Ingredients (8)
- 3 1/3 cups (500g) plain flour
- 2 tbs olive oil
- 10g sea salt flakes, plus extra to sprinkle
- 1 1/2 tsp (10g) dried instant yeast
- 2 tsp white sesame seeds
- 2 tsp linseeds, plus extra to sprinkle
- 200g blue cheese (such as Roquefort, gorgonzola or Stilton), at room temperature
- Fresh honeycomb (from selected grocers) and cocktail onions, to serve

1.To make crisps, combine flour, oil, salt, yeast, sesame and linseeds in a bowl with 1 cup (250ml) warm water. Stir to combine, then knead for 5 minutes or until smooth. Enclose in plastic wrap and chill for 2 hours.

2.Preheat oven to 180°C. Line 2 baking trays with baking paper.

3.Cut dough into 12 pieces and roll into balls. Working with 1 piece of dough at a time, place on a piece of baking paper and roll out to 1-2mm thick. Place on prepared tray and sprinkle with a little salt and extra linseeds.

4.Repeat with three more pieces of dough, then bake for 15-18 minutes until golden and crisp.

5.Roll out remaining dough while the first crisps are baking and cover with a clean tea towel until needed. Continue to bake in batches until all crisps are cooked (store extra crisps in an airtight container in a cool, dry place for up to 2 weeks).

6.Serve with cheese, honeycomb and onions.
