Method

  • 1.
To make crisps, combine flour, oil, salt, yeast, sesame and linseeds in a bowl with 1 cup (250ml) warm water. Stir to combine, then knead for 5 minutes or until smooth. Enclose in plastic wrap and chill for 2 hours.
  • 2.
Preheat oven to 180°C. Line 2 baking trays with baking paper.
  • 3.
Cut dough into 12 pieces and roll into balls. Working with 1 piece of dough at a time, place on a piece of baking paper and roll out to 1-2mm thick. Place on prepared tray and sprinkle with a little salt and extra linseeds.
  • 4.
Repeat with three more pieces of dough, then bake for 15-18 minutes until golden and crisp.
  • 5.
Roll out remaining dough while the first crisps are baking and cover with a clean tea towel until needed. Continue to bake in batches until all crisps are cooked (store extra crisps in an airtight container in a cool, dry place for up to 2 weeks).
  • 6.
Serve with cheese, honeycomb and onions.
