A no-bake dessert that makes the most of crunchy macadamias - we love it!

Ingredients (11)

  • 395g sweetened condensed milk
  • 125g unsalted butter
  • 2 tsp grated lemon zest
  • 250g digestive biscuit crumbs
  • 1/2 cup (100g) glacé cherries
  • 1/2 cup (150g) chopped glacé figs
  • 1/2 cup (150g) chopped glacé peaches
  • 100g lightly toasted macadamia nuts, chopped, plus extra to decorate
  • 1 cup (80g) desiccated coconut
  • 250g good-quality dark chocolate
  • 1 tbs vegetable oil

Method

  • 1.
    Grease and line a 20cm x 30cm slice pan.
  • 2.
    Stir milk, butter and zest in a pan over low heat until butter melts. Remove from heat and add crumbs, fruit, macadamias and coconut. Stir to combine, then spread in pan. Refrigerate while you make topping.
  • 3.
    Break up chocolate, place with oil in a heatproof bowl over a pan of simmering water (don’t let the bowl touch the water) and stir until melted and smooth. Spread over slice, then decorate with extra nuts.
  • 4.
    Chill slice until chocolate is set, then cut into squares.
