Macadamia nut slice
Ingredients (11)
- 395g sweetened condensed milk
- 125g unsalted butter
- 2 tsp grated lemon zest
- 250g digestive biscuit crumbs
- 1/2 cup (100g) glacé cherries
- 1/2 cup (150g) chopped glacé figs
- 1/2 cup (150g) chopped glacé peaches
- 100g lightly toasted macadamia nuts, chopped, plus extra to decorate
- 1 cup (80g) desiccated coconut
- 250g good-quality dark chocolate
- 1 tbs vegetable oil

1.Grease and line a 20cm x 30cm slice pan.

2.Stir milk, butter and zest in a pan over low heat until butter melts. Remove from heat and add crumbs, fruit, macadamias and coconut. Stir to combine, then spread in pan. Refrigerate while you make topping.

3.Break up chocolate, place with oil in a heatproof bowl over a pan of simmering water (don’t let the bowl touch the water) and stir until melted and smooth. Spread over slice, then decorate with extra nuts.

4.Chill slice until chocolate is set, then cut into squares.
