This martini version by Kate Tait turns the Mai Tai from a long drink into a more serious and silky cocktail.

Ingredients (7)

  • 1 shot (30ml) white rum
  • 1 shot (30ml) golden rum
  • 1/2 shot (15ml) Cointreau or grenadine
  • 1/2 shot (15ml) lime juice
  • 1/2 shot (15ml) almond syrup (see notes)
  • 2/3 shot (20ml) pineapple juice
  • Small ice cubes

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Chill a martini glass. Pour all the ingredients over small ice cubes in a cocktail shaker, then SHAKE, SHAKE, SHAKE vigorously (you want to get some tiny ice particles into the mix). Pour into the chilled martini glass and start sipping immediately.
