Say cheese with this delicious toasted sandwich recipe inspired by none other than Harry's Bar in Venice.

Ingredients (10)

  • 150g Taleggio or fontina cheese, at room temperature, chopped
  • 150g grated mozzarella
  • 2 tsp Dijon mustard, plus extra to serve
  • 2 tbs Worcestershire sauce
  • 1 egg yolk
  • 2 tbs double cream
  • 8 slices sourdough or brioche bread
  • 8 thin slices prosciutto, plus extra to serve
  • 2 tbs olive oil
  • 50g unsalted butter

Method

  • 1.
    Place bread slices on a clean work surface. Combine Taleggio, mozzarella, mustard, Worcestershire sauce, egg yolk and cream in a bowl. Spread 2 tbs cheese mixture over each slice of bread.

    Top 4 of the slices of bread with 2 slices of prosciutto each, then sandwich with remaining bread slices.
  • 3.
    In two batches, heat half the oil and butter in a large frypan over medium-high heat. Add 2 sandwiches and cook, turning halfway, for 5 minutes or until bread is golden and cheese has melted.
  • 4.
    Keep warm. Repeat with remaining oil, butter and sandwiches. Serve warm with extra mustard and prosciutto.
