“These choc-chip cookies get a makeover with malt, conjuring up childhood memories with every bite. They make a great snack for kids with a glass of milk,” says Lucy Busuttil.

Ingredients (11)

  • 140g unsalted butter, softened
  • 1/2 cup (125g) brown sugar
  • 1/4 cup (55g) caster sugar
  • 1 tsp vanilla paste
  • 2 eggs
  • 1 1/3 cup (200g) plain flour
  • 1/2 cup (45g) rolled oats
  • 3/4 cup (90g) malted milk drink powder
  • 1/2 tsp baking powder
  • 200g dark 70% chocolate, chopped
  • Salt flakes, to serve

Method

    Preheat oven 180°C. Line 2 baking trays with baking paper. Beat butter, sugars and vanilla in a stand mixer fitted with the paddle attachment until light and fluffy, then beat in eggs one at a time. Add flour, oats, malted milk powder, baking powder and a pinch of salt and slowly beat until just combined. Stir in 150g chocolate with a wooden spoon until mixture forms a dough. Roll 1⁄4-cupfuls of dough into balls and place 6cm apart on trays. Press down lightly. Top with remaining chocolate. Chill for 10 minutes or until firm.

    Bake for 10-12 minutes until starting to turn golden brown on the edges. Remove from the oven and sprinkle with salt flakes. Leave on the baking trays for 5 minutes to cool slightly, then transfer to a wire rack to cool completely.
