The hint of Maldon sea salt flakes in every bite is what makes these cookies extra special.

Ingredients (7)

  • 140g unsalted butter, chopped then softened
  • 140g caster sugar
  • 1 1/3 cups (200g) plain flour
  • 50g malted milk powder
  • 2 teaspoons vanilla extract
  • 60g white chocolate, finely chopped
  • 1/2 teaspoon Maldon Sea Salt Flakes

Method

  • 1.
    Place the butter, caster sugar, flour, milk powder and vanilla in the bowl of a stand mixer fitted with the paddle attachment and beat on low speed for 1-2 minutes until the mixture forms fine crumbs. Add chocolate, 1/2 tsp Maldon sea salt flakes and beat until well combined. Divide dough into two even pieces. Form each piece of dough into a 14cm round log 4cm wide. Wrap log in plastic wrap and refrigerate for 2 hours or up to 4 days.

    Preheat oven to 180°C. Line 2 baking trays with baking paper. Unwrap chilled dough and cut into 2cm thick rounds. Arrange cookies 3cm apart on the prepared trays and bake for 16-18 minutes until golden. Set aside to cool completely before serving. Store in an airtight container for up to a week.
