Mango caprese salad
This simple salad is such a winner - packed with the clean, fresh flavours of summer, it's perfect on its own or as a side with fish or chicken.

Ingredients (5)

  • 3 vine-ripened tomatoes, sliced
  • 2 ripe mangoes, flesh sliced
  • 2 buffalo mozzarella or 6 bocconcini, torn
  • 1 cup basil leaves
  • Extra virgin olive oil and white wine vinegar, to drizzle

Method

  • 1.
    Layer the tomatoes, mango and cheese on a serving platter. Scatter with basil, then drizzle with olive oil and a little vinegar. Season well with salt and pepper, then serve.
