Mango and chilli chutney
This sweet and spicy mango chutney is a delicious accompaniment to a chicken dinner.

Ingredients (5)

  • 1kg mangoes, peeled, chopped
  • 50g ginger, chopped
  • 2 long red chillies, seeds removed, chopped
  • 1 cup (220g) caster sugar
  • 1 cup (250ml) cider vinegar

Method

  • 1.
    Place all the ingredients in a saucepan over low heat, stirring until the sugar dissolves. Cook, stirring occasionally, for 40 minutes or until thick. Pour into sterilised jar (see note) and seal. Invert jar to create a sterile seal. Cool.
