Give your favourite cocktail a change-up with the addition of mango and mint. It's summer in a glass.

Ingredients (7)

  • 1/2 large mango
  • 2 sprigs mint leaves, plus extra to serve
  • 1/4 cup (60ml) tequila
  • 1 tbs simple (sugar) syrup
  • 1/2 lime, plus extra 1/2 lime, to serve
  • Ice cubes
  • Chilled soda water, to serve

Method

  • 1.
    Cut a small slice of mango and reserve for garnish. Place remaining mango in a jug. Blend to a puree using a handheld blender. Transfer puree to a cocktail shaker. Add mint, tequila, syrup and lime. Using a rolling pin, muddle ingredients. Add 4-5 ice cubes and shake vigorously to combine, then strain into a serving glass. Top up with soda water and garnish with a mint sprig and reserved mango slice. Serve with extra lime.
