Maple-candied sweet potato recipe

Serve with a spread of glazed pork ribs and apple pie for the ultimate autumn barbecue.
Ingredients (9)
- 1kg sweet potatoes, peeled, cut into 3cm pieces
- 1/2 cup (125ml) olive oil
- 1/3 cup (80ml) maple syrup
- 2 tbs brown sugar
- 3 rosemary sprigs
- 1 tbs malt vinegar
- 100g feta, crumbled
- 1/4 cup (40g) pepitas (pumpkin seeds), toasted
- 1/2 cup snow pea shoots
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Soak potato in cold water for 45 minutes to soften. Drain and pat dry with paper towel.

2.Preheat oven to 200°C. Grease and line a large baking tray with baking paper. Toss sweet potato, oil, maple, sugar and rosemary in a bowl. Season. Spread sweet potato over prepared tray.

3.Roast, tossing every 20 minutes, for 40-45 minutes until cooked through and slightly caramelised.

4.Drizzle malt vinegar over sweet potato, then scatter over feta, pepitas and snow peas to serve.
