Maple-candied sweet potato

Serve with a spread of glazed pork ribs and apple pie for the ultimate autumn barbecue.

Ingredients (9)

  • 1kg sweet potatoes, peeled, cut into 3cm pieces
  • 1/2 cup (125ml) olive oil
  • 1/3 cup (80ml) maple syrup
  • 2 tbs brown sugar
  • 3 rosemary sprigs
  • 1 tbs malt vinegar
  • 100g feta, crumbled
  • 1/4 cup (40g) pepitas (pumpkin seeds), toasted
  • 1/2 cup snow pea shoots

Method

  • 1.
    Soak potato in cold water for 45 minutes to soften. Drain and pat dry with paper towel.
  • 2.
    Preheat oven to 200°C. Grease and line a large baking tray with baking paper. Toss sweet potato, oil, maple, sugar and rosemary in a bowl. Season. Spread sweet potato over prepared tray.
  • 3.
    Roast, tossing every 20 minutes, for 40-45 minutes until cooked through and slightly caramelised.
  • 4.
    Drizzle malt vinegar over sweet potato, then scatter over feta, pepitas and snow peas to serve.
