This maple-glazed salmon with pomegranate salsa is the perfect midweek meal. The salmon is coated in a sticky spiced glaze and the pomegranate salsa adds a punchy tang and sweetness to the dish.

Ingredients (10)

  • 800g skinless salmon fillet, pin-boned
  • 2 tbs maple syrup
  • 2 garlic cloves, crushed
  • 1 1/2 tsp ras el hanout (Moroccan spice mix)
  • 2 tbs chopped pickled jalapeno, plus 2 tbs pickling liquid
  • 1/2 red onion, finely chopped
  • 1 Lebanese cucumber, finely chopped
  • 1/2 bunch coriander, leaves picked
  • Seeds of 1 pomegranate
  • 1 tbs olive oil

Method

  • 1.
    Preheat oven grill to high. Place salmon on a baking tray lined with baking paper. Combine maple, garlic and ras el hanout in a bowl. Season, then brush over salmon. Grill salmon for 6-8 minutes until charred and just cooked.

    To make pomegranate salsa, combine all remaining ingredients in a bowl.
  • 3.
    Serve salmon topped with salsa.
