Be sure you opt for a ham with rind, as this means that the ham will still have the crucial layer of fat underneath, which is what will turn sticky and golden and caramelised when you coat it with glaze. Feel free to choose smoked or unsmoked ham, depending on your personal preference.

In this recipe, a whole leg of ham has the rind removed, the fat is glazed and the ham is baked in a 170°C/150°C fan-forced oven for 1 hour and 30 minutes or until golden and caramelised. Glazing adds colour, flavour and a gorgeous crust. It’s layered on during the cooking time to build caramelisation and intensify the sweet, savoury flavours of the ham. 

How to store leftover maple honey mustard glazed ham

Leftover ham can be stored in the fridge for up to 2 weeks, and in the freezer for longer. It’s best to store the ham on the bone, if you have the room. For larger pieces of ham, store whole, wrapped in layers of plastic wrap and foil. You can also pre-slice ham and keep it stored in an airtight container, but sliced ham tends to dry out faster, so be sure to keep some recipes in mind to make use of the leftovers, such as toasties, fritters or fried rice. Maple honey mustard glazed ham

Ingredients (6)

  • 1/2 cup (125g) firmly packed brown sugar
  • 1/3 cup (80ml) maple syrup
  • 80ml (1/3 cup) Woolworths Pure Honey
  • 1 tbs Dijon mustard
  • 1 (about 8kg) whole leg ham, on the bone
  • Whole cloves, to stud

Method

  • 1.
    Stir the sugar, maple syrup, honey and mustard in a bowl until the sugar dissolves.
  • 2.
    Preheat oven to 170°C/150°C fan-forced. Line a large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position. Remove all other shelves. Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves. Transfer to prepared dish.

    Brush one-third of the glaze over the ham. Bake, brushing with remaining glaze every 25 minutes, for 1 hour 30 minutes, or until golden brown and caramelised. Remove from the oven and set aside for 15 minutes to rest, before transferring to a platter and slicing to serve.
