Ingredients (8)

  • 24 fresh anchovies*
  • 250ml (1 cup) white wine vinegar
  • 2 teaspoons chopped fresh oregano
  • 1 bay leaf
  • 2 teaspoons sea salt
  • 125ml (1/2 cup) Spanish extra virgin olive oil
  • 3 garlic cloves, chopped
  • 2 tablespoons chopped flat-leaf parsley

Method

  • 1.
    Clean the anchovies, removing the heads and spines. Place in a bowl and add the white wine vinegar, oregano, bay leaf and salt. Cover and refrigerate for 24 hours.
  • 2.
    Drain the anchovies well and place in a serving dish.
  • 3.
    Combine the olive oil, garlic and parsley in a bowl, then pour over the anchovies and serve.
