Marinated anchovies (boquerones)

Ingredients (8)
- 24 fresh anchovies*
- 250ml (1 cup) white wine vinegar
- 2 teaspoons chopped fresh oregano
- 1 bay leaf
- 2 teaspoons sea salt
- 125ml (1/2 cup) Spanish extra virgin olive oil
- 3 garlic cloves, chopped
- 2 tablespoons chopped flat-leaf parsley
Method

1.Clean the anchovies, removing the heads and spines. Place in a bowl and add the white wine vinegar, oregano, bay leaf and salt. Cover and refrigerate for 24 hours.

2.Drain the anchovies well and place in a serving dish.

3.Combine the olive oil, garlic and parsley in a bowl, then pour over the anchovies and serve.
