Marmalade-glazed pork with mash

It's so easy to prepare, this marmalade-glazed pork with mash is sure to become a family fave.
Ingredients (10)
- 800g desiree potatoes (about 4), cut into equal-sized pieces
- 1 tablespoon olive oil
- 800g pork fillet, trimmed, cut into 8 medallions
- 1/3 cup (80ml) milk warmed
- 50g unsalted butter
- 2 handfuls wild rocket, to serve
Marmalade glaze
- 1 cup (250ml) chicken stock
- 1/4 cup orange marmalade
- 2 teaspoons balsamic vinegar
- 1 teaspoon brown sugar
Method

1.Preheat the oven to 200°C. Whisk glaze ingredients together, then set aside.

2.Place the potatoes in a saucepan and cover with salted water. Bring to the boil, then cook over medium heat for 15-20 minutes (depending on the size of potato pieces) until tender.

3.Meanwhile, heat the oil in a large frypan over medium-high heat. Cook pork for about 3 minutes each side until browned. Transfer to a baking tray and place in the oven for about 10 minutes until cooked through.

4.Reduce the stove to medium heat and add the glaze mixture to the frypan.

5.Cook for about 5 minutes until thick enough to coat the back of a spoon.

6.Drain the cooked potatoes and return to the heat for a minute to dry out. Mash potato (or pass through a ricer) and mix in the milk and butter, then season with salt and pepper. Place some mash and 2 pork medallions on each plate. Drizzle over glaze and serve with rocket.
