It's so easy to prepare, this marmalade-glazed pork with mash is sure to become a family fave.

Ingredients (10)

  • 800g desiree potatoes (about 4), cut into equal-sized pieces
  • 1 tablespoon olive oil
  • 800g pork fillet, trimmed, cut into 8 medallions
  • 1/3 cup (80ml) milk warmed
  • 50g unsalted butter
  • 2 handfuls wild rocket, to serve

Marmalade glaze

  • 1 cup (250ml) chicken stock
  • 1/4 cup orange marmalade
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon brown sugar

Method

  • 1.
Preheat the oven to 200°C. Whisk glaze ingredients together, then set aside.
  • 2.
Place the potatoes in a saucepan and cover with salted water. Bring to the boil, then cook over medium heat for 15-20 minutes (depending on the size of potato pieces) until tender.
  • 3.
Meanwhile, heat the oil in a large frypan over medium-high heat. Cook pork for about 3 minutes each side until browned. Transfer to a baking tray and place in the oven for about 10 minutes until cooked through.
  • 4.
Reduce the stove to medium heat and add the glaze mixture to the frypan.
  • 5.
Cook for about 5 minutes until thick enough to coat the back of a spoon.
  • 6.
Drain the cooked potatoes and return to the heat for a minute to dry out. Mash potato (or pass through a ricer) and mix in the milk and butter, then season with salt and pepper. Place some mash and 2 pork medallions on each plate. Drizzle over glaze and serve with rocket.
