These spicy lamb koftas by Matt Moran are simply divine. Paired with its delicious labneh and sumac tzatziki, it will have all your guests coming back for seconds.
Ingredients (15)
- 1/2 tbs extra virgin olive oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp chilli flakes
- 500g lamb mince
- 1 cup flat-leaf parsley leaves, finely chopped
- Lemon wedges, to serve
- Thinly sliced white onion, to serve
Labneh & sumac tzatziki
- 1 Lebanese cucumber, grated
- 150g labneh or thick Greek yoghurt
- 1/2 garlic clove, finely chopped
- 1/2 tsp sumac
- Zest of 1/2 lemon

1.Heat olive oil in a medium frypan over medium heat. Add onion and garlic and cook for 4-5 minutes until softened.

2.Add the spices and cook for a further 2-3 minutes until fragrant, then remove from the heat and set aside to cool.

3.Place lamb mince and parsley in a bowl with the cooled onion mixture. Mix well and season.

4.Divide mince mixture into 8 portions. Mould into ovals and thread onto skewers. Place in the fridge to firm slightly, until ready to cook.

5.For the tzatziki, place cucumber in a bowl and season well with salt flakes. Allow to sit for 10 minutes then, using your hands or a cloth, squeeze out excess water from the cucumber. Place drained cucumber in a bowl with the labneh, garlic, sumac and lemon zest. Season to taste and mix to combine. Set aside.

6.Preheat barbecue or chargrill pan over medium-high heat. Grill koftas for 4-5 minutes on each side until golden brown and cooked through.

7.Serve with tzatziki, lemon wedges and sliced white onion.

You will need 8 metal or wooden skewers.
