Mediterranean tuna slice summer rolls
Pair tuna with basil, capsicum and tomatoes on a crunchy bread roll - summer on a plate. 

Ingredients (8)

  • 4 small ciabatta rolls
  • 185g can tuna slices
  • 2 tbs red wine vinegar
  • 1 garlic clove, crushed
  • 2 large tomatoes, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 roasted red capsicum, cut into thin strips
  • 1/4 cup basil leaves

Method

  • 1.
    Slice the rolls in half horizontally. Strain oil from tuna into a small bowl. Add the vinegar and garlic to oil, and season with salt and pepper. Drizzle oil mixture over cut sides of bread.
  • 2.
    Arrange the tomato, onion, capsicum, basil, tuna and remaining bread half on top.
