Mediterranean tuna slice summer rolls
Pair tuna with basil, capsicum and tomatoes on a crunchy bread roll - summer on a plate.
Ingredients (8)
- 4 small ciabatta rolls
- 185g can tuna slices
- 2 tbs red wine vinegar
- 1 garlic clove, crushed
- 2 large tomatoes, thinly sliced
- 1 small red onion, thinly sliced
- 1 roasted red capsicum, cut into thin strips
- 1/4 cup basil leaves
Method

1.Slice the rolls in half horizontally. Strain oil from tuna into a small bowl. Add the vinegar and garlic to oil, and season with salt and pepper. Drizzle oil mixture over cut sides of bread.

2.Arrange the tomato, onion, capsicum, basil, tuna and remaining bread half on top.
