The classic French tarte tatin is already a delectably easy recipe to make at home, but we've just made it even easier, converting it into simple single-serve desserts that you can whip up for guests or family in just 45 minutes from start to finish. Très bien!
You’ll need a 6-hole, ¾-cup (180ml) capacity Texas muffin pan for this recipe.
Ingredients (6)
- ½ cup (110g) white sugar
- 50g salted butter, chopped
- 3 Granny Smith apples, peeled, halved, cored
- Calvados (French apple brandy, substitute regular brandy), to drizzle
- 375g sheet frozen puff pastry, just thawed (we used Carême)
- Creme fraiche, to serve (optional)

1.Preheat oven to 200°C/180°C fan-forced.

2.Heat a medium frypan over high heat. Add sugar and cook, tossing regularly, for 5 minutes, or until sugar melts and turns a golden caramel. Add butter and swirl pan until butter melts. Pour evenly into a 6-hole, ¾-cup (180ml) capacity Texas muffin pan. Cut each half apple into 4 wedges and place, cut-side up, in pan holes. Drizzle with a little Calvados. Cut 6 x 9cm rounds from pastry and place over apple, tucking edges of pastry into pan holes. Bake for 25-30 minutes, until pastry is puffed and golden.

3.Using a small knife, run around the inside of each hole to loosen any caught pastry, then carefully turn pan onto a lipped serving plate.

4.Serve tartes warm, with a dollop of creme fraiche, if desired.
