Mini beef burgers
We love a good old-fashioned milk bar-style burger - just add a cold beer.
Ingredients (14)
- 300g lean beef mince
- 1 red onion, grated
- 1/4 cup chopped flat-leaf parsley
- 1/4 cup chopped basil
- 1/2 cup (35g) fresh breadcrumbs
- 1 egg, lightly beaten
- 2 tbs barbecue sauce
- 3 slices tasty cheese
- 6 small wholegrain rolls, split
- 6 butter lettuce leaves
- 1 large ripe tomato, sliced
- 440g can pineapple thins in natural juice, drained
- 225g can beetroot slices, drained
- Tomato sauce, to serve

1.Preheat the grill to high.

2.Place mince, onion, herbs, breadcrumbs, egg and barbecue Sauce in a large bowl. Using clean hands, mix together until combined. Shape into 6 small burger patties. Cook burgers under the grill for 3-5 minutes each side until golden and cooked through.

3.Meanwhile, stack the cheese slices and slice into quarters to form 12 small squares.

4.Top each burger patty with a squirt of Barbecue Sauce, then top each patty with 1 square of cheese. Place the roll bases on the grill tray with the burgers and top with the remaining squares of cheese. Grill for a further 1-2 minutes until the cheese is golden and bubbling.

5.Fill the rolls with burger patties, lettuce, tomato, pineapple and beetroot, then serve with tomato sauce, if desired.
