Blini with sea urchin cream cheese and dill

Ingredients (13)

  • 125g cream cheese, room temperature, chopped
  • 1/3 cup (80ml) pure (thin) cream
  • 5 strips sea urchin (uni), roughly chopped
  • 2 tbs finely chopped chives
  • Zest & juice of 1 lemon
  • Dill sprigs, to serve

Buckwheat blini

  • 75g each buckwheat flour & self-raising flour, sifted
  • 12g caster sugar
  • 1 tsp sea salt
  • 1 tsp baking powder, sifted
  • 30g butter, melted
  • 200ml milk
  • 1 egg, lightly beaten

Method

  • 1.
    To make the cream cheese spread, place the cream cheese and cream in a small food processor and pulse to combine. Transfer mixture to a bowl. Add the urchin, chives, lemon zest and juice, and lightly fold. Season. Set aside until ready to serve.

    For the blini, place all dry ingredients in a large bowl and make a well in the centre. Place all wet ingredients in a jug, stir to combine. Pour wet ingredients into the well and mix until combined.
  • 3.
    Place a lightly greased large non-stick frypan over medium-high heat. Working in batches, place 2 tsp of batter into pan, and spread out to small circles. Cook, turning halfway, for 1-2 minutes or until golden and cooked through. Remove and cool on a wire rack. Repeat with remaining mixture.
  • 4.
    Top blini with sea urchin cream cheese and scatter with dill sprigs to serve.
