Blini with sea urchin cream cheese and dill

Ingredients (13)
- 125g cream cheese, room temperature, chopped
- 1/3 cup (80ml) pure (thin) cream
- 5 strips sea urchin (uni), roughly chopped
- 2 tbs finely chopped chives
- Zest & juice of 1 lemon
- Dill sprigs, to serve
Buckwheat blini
- 75g each buckwheat flour & self-raising flour, sifted
- 12g caster sugar
- 1 tsp sea salt
- 1 tsp baking powder, sifted
- 30g butter, melted
- 200ml milk
- 1 egg, lightly beaten

1.To make the cream cheese spread, place the cream cheese and cream in a small food processor and pulse to combine. Transfer mixture to a bowl. Add the urchin, chives, lemon zest and juice, and lightly fold. Season. Set aside until ready to serve.

2.For the blini, place all dry ingredients in a large bowl and make a well in the centre. Place all wet ingredients in a jug, stir to combine. Pour wet ingredients into the well and mix until combined.

3.Place a lightly greased large non-stick frypan over medium-high heat. Working in batches, place 2 tsp of batter into pan, and spread out to small circles. Cook, turning halfway, for 1-2 minutes or until golden and cooked through. Remove and cool on a wire rack. Repeat with remaining mixture.

4.Top blini with sea urchin cream cheese and scatter with dill sprigs to serve.
