Mint, bean and feta salad
Add a burst of seasonal freshness to the menu.

Ingredients (7)

  • 2 x 500g pkts frozen broad beans
  • 250g frozen peas
  • ⅓ cup extra virgin olive oil
  • 3 zucchinis, diced
  • 1 lemon, finely zested, juiced
  • mint leaves, torn
  • 100g Persian feta, crumbled

Method

  • 1.
    Add beans and peas to a saucepan of boiling water for 3-4 minutes until bright green. Drain and refresh under cold water. Drain, peel beans and discard skins. Transfer to a large bowl.
  • 2.
    Heat 1½ tbs of the oil in a small frying pan and cook zucchini over mediumhigh heat for 5 minutes until golden and tender. Add to bowl with beans and peas, along with lemon zest, mint and feta.
  • 3.
    Whisk lemon juice and remaining oil together in a jug. Season with pepper. Pour over salad and serve.
