Lemon salmon with minted crushed peas (low-fat)
Spring peas make a gorgeous side dish - they're tasty and so pretty on the table.
Ingredients (5)
- 3 cups fresh or frozen baby peas
- Pinch of caster sugar
- 30g unsalted butter
- 1/4 cup mint leaves, finely chopped
- 1/4 cup flat-leaf parsley leaves, finely chopped
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Place the peas and sugar in a saucepan of boiling water over high heat. Simmer for 2-3 minutes, then drain and refresh in a bowl of iced water. Drain.

2.Return the saucepan to medium heat and add the butter and peas. Cook, stirring, until the butter melts and coats the peas. Stir in the mint and parsley, then season with sea salt and freshly ground black pepper.

3.Transfer the peas to a serving bowl and serve immediately.
