Miso and maple wings
Miso and maple syrup makes these chicken wings the perfect mixture of sweet and savoury.
Ingredients (7)
- 2 tbs white (shiro) miso
- ½ cup (125ml) maple syrup
- 2 tbs light soy sauce
- 2 tbs rice vinegar
- 2kg chicken wings, tips removed
- ½ tsp smoked paprika
- Micro-shiso, to serve

1.Combine miso, maple syrup, soy and vinegar in a small saucepan over low heat, bring to a simmer and cook for 6 minutes or until thickened slightly. Cool completely.

2.Preheat oven to 200°C. Line a baking tray (or two, depending on size) with baking paper and arrange chicken wings in a single layer. Pour sauce over and toss to coat. Sprinkle with smoked paprika and bake, turning every 20 minutes, for 1 hour or until caramelised. Scatter with shiso to serve
