Miso salmon noodles
This easy Vietnamese salmon salad is ideal for hot nights when you don't want to spend too much time in the kitchen.
Ingredients (11)
- 2 tbs white miso paste
- 1 tsp grated ginger
- 100ml soy sauce
- 2 x 180g skinless salmon fillets, pin-boned
- 2 tsp sesame oil
- 1 tbs lime juice
- 2 tbs mirin seasoning
- 270g somen noodles
- 100g small snow peas
- 1/2 telegraph cucumber, thinly sliced lengthways
- 1 cup coriander leaves

1.Preheat oven to 160°C. Line a baking tray with baking paper.

2.Whisk together the miso, ginger and 2 tablespoons soy sauce, then brush over the salmon. Put the salmon on the tray and bake for 10 minutes until just cooked. Cover with foil and rest for 5 minutes.

3.Meanwhile, whisk sesame oil, lime juice, mirin and remaining soy in a bowl. Set aside.

4.Cook the noodles according to packet instructions. Drain and refresh in cold water.

5.Blanch snow peas in boiling water for 1-2 minutes. Drain and refresh under cold water.

6.Divide the noodles, cucumber, snow peas and coriander between 4 bowls. Break the salmon into chunks and add to the bowls.

7.Toss with the dressing and serve.
