Mixed bean salad
Ingredients (10)
- 500g Homebrand Frozen Broad Beans
- 200g sugar-snap peas, trimmed
- 200g baby green beans, trimmed
- 200g baby spinach leaves
- ½ cup coarsely chopped mint leaves
- ½ cup coarsely chopped continental parsley leaves
- 180g Persian feta, drained, oil reserved
- 1 lemon, juiced
- 1 tbs white wine vinegar
- 1 tsp Dijon mustard
Method

1.Blanch broad beans, peas and beans in boiling, salted water for 3 minutes or until just tender. Drain and place in ice water for 5 minutes. Drain. Remove outer skin of broad beans.

2.Combine broad beans, peas, beans, spinach, herbs and feta in a large serving bowl. Add reserved oil, lemon juice, vinegar,mustard, salt and pepper into a screw-top jar and shake to combine. Drizzle dressing over salad. Serve.
