Ingredients (10)

  • 500g Homebrand Frozen Broad Beans
  • 200g sugar-snap peas, trimmed
  • 200g baby green beans, trimmed
  • 200g baby spinach leaves
  • ½ cup coarsely chopped mint leaves
  • ½ cup coarsely chopped continental parsley leaves
  • 180g Persian feta, drained, oil reserved
  • 1 lemon, juiced
  • 1 tbs white wine vinegar
  • 1 tsp Dijon mustard

Method

  • 1.
    Blanch broad beans, peas and beans in boiling, salted water for 3 minutes or until just tender. Drain and place in ice water for 5 minutes. Drain. Remove outer skin of broad beans.
  • 2.
    Combine broad beans, peas, beans, spinach, herbs and feta in a large serving bowl. Add reserved oil, lemon juice, vinegar,mustard, salt and pepper into a screw-top jar and shake to combine. Drizzle dressing over salad. Serve.
