Mulled wine

This sweet, comforting drink will warm you up on a chilly day, or when you're halfway down a ski slope.
Ingredients (10)
- Juice of 2 oranges, plus the peel of 1
- Juice of 1 lemon, plus the peel of 1/2
- 100g Woolworths Essentials Brown Sugar
- 2 star anise
- 2 cinnamon quills, plus extra to serve
- 2 bay leaves
- 1 vanilla pod, seeds scraped
- 4 cloves
- 1/8 tsp nutmeg, freshly grated, plus extra to serve
- 2 bottles pinot noir

1.Place citrus juice, peel, sugar, star anise, cinnamon, bay leaves, vanilla, cloves, nutmeg and 2 cups (500ml) of water into a large saucepan over medium heat. Bring to a boil, stirring continuously until the sugar has dissolved. Reduce heat to medium-low and simmer for 10 minutes to develop flavours and reduce slightly.

2.Add wine and bring barely to a boil (be careful not to boil the wine – you don’t want to boil off the alcohol) over medium heat. Reduce heat to very low and barely simmer for 5 minutes. Remove from heat, and divide among serving glasses. Serve with extra cinnamon quills and grated nutmeg.
Recipe Notes
You can add 1/4 cup (60ml) of your favourite liquor such as brandy, Pimms or Campari
