This recipe gives a delicious mod-nod to the Italian staple, the caprese salad.

Ingredients (8)

  • 4 vine-ripened tomatoes
  • 1 garlic clove, crushed
  • 4 anchovy fillets in oil, drained, finely chopped
  • Pinch of white sugar
  • 1/3 cup (80ml) olive oil
  • 2 tsp balsamic vinegar
  • 4 small balls burrata or buffalo mozzarella
  • Chargrilled sourdough or ciabatta and basil leaves, to serve

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Grate the tomatoes on the large holes of a box grater, discarding the skin. Transfer to a bowl and add garlic, anchovy and sugar. Season, then stir in the olive oil and balsamic. Refrigerate for 20 minutes.
  • 2.
    Place a burrata on each serving plate. Spoon tomato dressing over. Serve with chargrilled bread, scattered with basil.
