The new caprese
Ingredients (8)
- 4 vine-ripened tomatoes
- 1 garlic clove, crushed
- 4 anchovy fillets in oil, drained, finely chopped
- Pinch of white sugar
- 1/3 cup (80ml) olive oil
- 2 tsp balsamic vinegar
- 4 small balls burrata or buffalo mozzarella
- Chargrilled sourdough or ciabatta and basil leaves, to serve
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Grate the tomatoes on the large holes of a box grater, discarding the skin. Transfer to a bowl and add garlic, anchovy and sugar. Season, then stir in the olive oil and balsamic. Refrigerate for 20 minutes.

2.Place a burrata on each serving plate. Spoon tomato dressing over. Serve with chargrilled bread, scattered with basil.
